Mixed Berry Muffins
Ingredients
- 2 ¼ cups (335g) self raising flour
- 1 cup (220g) castor sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 100g butter (melted)
- 1 cup milk
- 1 teaspoon grated lemon rind
- 200g fresh or frozen mixed berries
Instructions
- Preheat oven to 180°. Grease 6 hole Texas muffin pan or spray 6 large disposable muffin cases and place on an oven tray.
- Sift flour into large bowl; add sugar then combine extract, egg, butter, milk and rind. Add berries and stir thorough gently.
- Divide muffin mixture among holes of prepared pans.
- Bake muffins in oven for about 35 minutes. Stand muffins in pan for a few minutes before turning onto a wire rack.
