Discard Brownies
Ingredients
- 112.5 g unsalted butter
- 340 g chocolate chips
- 40 g cocoa powder
- 10 g vanilla extract
- 2 large eggs
- 1 egg yolk
- 200 g granulated sugar
- 110 g dark brown sugar
- 125 g sourdough starter discard
- 120 g all-purpose flour
- 5 g salt
Instructions
- Preheat oven to 160°C and line a 9” x 9” baking dish with parchment paper.
- Melt the butter in a saucepan over low heat. Add chocolate chips, cocoa powder, and vanilla. Stir until smooth. Remove from heat and let cool slightly.
- Beat eggs, granulated sugar, and brown sugar in a large bowl with an electric mixer for 7–10 minutes until light and fluffy.
- Combine chocolate mixture and sourdough discard into the egg mixture. Mix on low until just combined.
- Fold in flour and salt using a spatula. Batter will be thick.
- Pour batter into the prepared dish and smooth the top.
- Bake for 35–40 minutes, until set in the centre.
- Cool completely in the pan. Lift out using parchment and cut into squares.
