Chickpea and Cauliflower Salad
Ingredients
- 1 medium cauliflower head cut into florets
- 1 can chickpeas
- 2.5 Tbs honey (divided)
- 3 Tbs olive oil (divided)
- 3/4 Tbs paprika
- 3/4 tsp salt
- 1 tsp garlic powder
- 1 avocado chopped
- 1/2 cup parsley chopped
- 1/3 cup finely diced red onion
- 1/2 of a lime
- 1/4 cup sunflower seeds
Instructions
- Preheat oven to 220°C
- Add cauliflower and chickpeas to a bowl. Toss with 2 Tbs olive oil, 1.5 Tbs honey, paprika, garlic powder and salt. Toss to combine.
- Spread mixture onto a sheet pan. Roast for 30-35mins until tender and brown.
- Add roast cauliflower and chickpeas to a bowl. Add avocado, parsley, lime and onion. Add remaining olive oil and honey. Toss to combine.
- Transfer to a plate and top with sunflower seeds.
