Chickpea and Cauliflower Salad

Ingredients

  • 1 medium cauliflower head cut into florets
  • 1 can chickpeas
  • 2.5 Tbs honey (divided)
  • 3 Tbs olive oil (divided)
  • 3/4 Tbs paprika
  • 3/4 tsp salt
  • 1 tsp garlic powder
  • 1 avocado chopped
  • 1/2 cup parsley chopped
  • 1/3 cup finely diced red onion
  • 1/2 of a lime
  • 1/4 cup sunflower seeds

Instructions

  1. Preheat oven to 220°C
  2. Add cauliflower and chickpeas to a bowl. Toss with 2 Tbs olive oil, 1.5 Tbs honey, paprika, garlic powder and salt. Toss to combine.
  3. Spread mixture onto a sheet pan. Roast for 30-35mins until tender and brown.
  4. Add roast cauliflower and chickpeas to a bowl. Add avocado, parsley, lime and onion. Add remaining olive oil and honey. Toss to combine.
  5. Transfer to a plate and top with sunflower seeds.
