Cheesy Garlic Sourdough Focaccia

Ingredients

Dough

  • 100g active starter
  • 425g water
  • 13g salt
  • 500g bread flour

Cheese Mixture

  • 150g mozzarella cheese, shredded
  • 70g parmesan cheese, shredded
  • 100g sharp cheddar cheese
  • 4g dried oregano
  • 4g dried basil

Garlic Herb Oil

  • 55g olive oil
  • 35g unsalted butter, melted
  • 3g garlic powder
  • 2g salt
  • 1g dried oregano
  • 1g dried basil

Instructions

  1. Mix Dough: Stir starter, water, sugar, salt, and flour until a sticky dough forms. Rest covered for 30 minutes.
  2. Strengthen with Folds: Perform 4 rounds of stretch and folds every 30 minutes, adding the cheese mixture during the second fold. After the final fold, let rest until risen by about 50–60%.
  3. Make Garlic Oil: Mix garlic herb oil ingredients together
  4. Prepare Pan: Grease a 9x13” pan with half. Add dough, stretch to fill pan. Pour remaining oil on top.
  5. Final Proof: Let rise 3–5 hours until puffy and doubled. (Optional: Refrigerate up to 48 hrs before this step.)
  6. Bake: Preheat oven to 220 C. Stretch dough to pan edges. Pour any remaining oil and cheese and dimple deeply with your fingers. Bake for 25–30 minutes until golden and crisp. Cool in pan 5–10 minutes, then transfer to a wire rack. Enjoy!
