Brown Rice Salad
Ingredients
- 3 cups cooked brown rice
- 6 spring onions - sliced
- 1 red capsicum finely diced
- 1/2 cup currants
- 2 Tbs sunflower seeds
- 2 Tbs pepitas
- 1/4 cup sunflower oil
- 4 Tbs soy sauce
- 2 Tbs lemon juice
- 1 crushed garlic clove
Instructions
- Cook rice and place cooked rice, spring onion, capsicum, currants and seeds in a bowl and toss.
- Shake together oil, soy sauce, lemon juice and garlic and pour over salad prior to serving.
