Brown Rice Salad

Ingredients

  • 3 cups cooked brown rice
  • 6 spring onions - sliced
  • 1 red capsicum finely diced
  • 1/2 cup currants
  • 2 Tbs sunflower seeds
  • 2 Tbs pepitas
  • 1/4 cup sunflower oil
  • 4 Tbs soy sauce
  • 2 Tbs lemon juice
  • 1 crushed garlic clove

Instructions

  1. Cook rice and place cooked rice, spring onion, capsicum, currants and seeds in a bowl and toss.
  2. Shake together oil, soy sauce, lemon juice and garlic and pour over salad prior to serving.
